In a way that only the Irish people can, the beautiful Cahill Porter Cheddar combines the tradition of Irish cheddar making with the strong, robust flavor of porter ale. Made in Limerick, Ireland, the rich, yeasty flavor of Dublin-produced Guinness stout complements a perfectly creamy cow’s milk cheddar. Made by Dave and Marion Cahill, the Porter Cheddar is individually hand-crafted using the pasteurized milk of Holstein Friesian cows, and is beautifully marbled by the introduction of the ale. The cheddar curds are bathed in the Guinness and then pressed into molds. A mosaic-like pattern appears in the semi-hard cheese, creating a striking appearance. The cheese finishes with a sweet note, which may be described as floral, or even “chocolatey.” Try it on your next deli sandwich for a delicious and unexpected twist!
